Gluten Free Waffles

  Description

Make in batches , freeze them, pop them into a toaster and you have your on-the-go weekday breakfast ready !

Ingredients

  • Kodiak Pancake mix – 100 gm
  • Eggs – 2
  • Milk 2 % – 50 ml
  • Vanilla Whey Protein Powder – 2 Scoops
  • Banana – 1 whole
  • Strawberries – 50 gm
  • Blueberries – 50 gm

Steps

  • Blend all the liquid ingredients and then pour into dry ingredients gently to avoid lumps.
  • Heat up your waffle maker and start adding the batter
  • I usually don’t add oil to coat to save up those extra calories and use non-stick waffle maker. However, if you are using cast iron you might wanna spray some oil / butter to your griddle.
  • Wait for the green light and take it off gently.
  • Let it cool completely and only then add to foil and freeze
  • I usually eat half the batch and save the rest of the half for later
  • Top it with the washes berries and dive in !

Notes

  • Lazy gal hack ? Throw everything into a blender and mix into a nice lump free consistency.
  • Be sure to have a spatula readily available to keep mixing if lumps form.
  • I sometimes use the 0 calories maple syrup if I feel like a syrup day ( I am trying to cut down on this as I don’t like my waffles too sweet )
