Quick and easy breakfast for a busy busy morning !
Ingredients

- Mozzarella Cheese – 50 gm

- Tomato

- Onions

- Capsicum

- Oregano
-
- Chilli Flakes

- Salt

- Olive oil – 1 tsp

- Sourdough Bread – 2 pieces
Steps

- Toast the bread separately in toaster or pan and keep aside

- Cut the capsicum, onions and tomato as cubes and keep aside

- Cut mozzarella cheese into smaller cubes and keep aside

- Take a pan and add the oil. I prefer nonstick to consume less oil. Add all veggies and let it cook partially

- We wanna have a little crunch to onion and capsicum , just like as in pizza so don’t overcook

- When the mixture becomes a little gooey add the cheese, oregano and salt
-
- When you’ll notice the cheese melting a little, turn off the stove
-
- Transfer the mixture onto the toast and top it with chili flakes if you like !

- If you use a thinner bread, the cheese mixture may make it soggy by the time you eat. So make sure you use a thicker bread for this

- I used a simple Trader Joe’s everything sourdough bread because I had that in my pantry, but feel free to use baguette or ciabatta bread
